Olive Oil Salads

Mussel salad

Best paired with


  • 1 small green and 1 small red pepper
  • 1/2 cucumber
  • 4 onions
  • 6 tomatoes
  • 3 tablespoons wine vinegar
  • salt, pepper
  • 4 tablespoons olive oil
  • 6 tablespoons olive oil
  • 3-4 cloves garlic
  • 250 g mussels

Wash the peppers, clean them, cut them in halves and remove the seeds. Peel the fresh cucumber, halve it lengthwise and remove the seeds with a spoon. Put the tomatoes, peppers, cucumbers and onions in a large bowl. Add the vinegar, salt, pepper, olive oil and the garlic. Mix the marinade with the vegetables, stir it well and leave it in the refrigerator for an hour. Cook the mussels; add them to the salad and mix.
